Yummy Shrimp Dish

My kids choose the name for this dish, and they both surprisingly loved it! Red curry, pumpkin, shrimp, spinach, and water chestnuts combine for a tasty and hearty dinner. Best part was that I was able to make on Sunday, so my husband just had to toss it in the oven to warm it for dinner on Monday. We served it over coconut rice – which was also delicious!

Ingredients

  • Shrimp, cleaned and tails removed, 2 lbs.

  • 1 can pumpkin puree (don’t use pumpkin pie mix!)

  • 1 lbs. spinach (I prefer using fresh baby spinach, but you can use frozen spinach, defrosted and drained well)

  • 12 oz. unsweetened coconut milk

  • 1 onion, diced

  • 2 stalks celery, diced

  • 2 carrots, diced

  • 1 can water chestnuts

  • 3 tsp. red curry paste

  • 2 TBS lemongrass curry seasoning – see note (I bought this spice blend from the Savory Spice Shop in Peddler’s Village, PA)

  • 2 TBS fish sauce

  • 1 TBS soy sauce

  • Non-stick cooking spray

Directions

  • Dice onion, celery, and carrot into bite-sized pieces.
  • Spray skillet with non-stick cooking spray. Add onion, celery, and carrot into skillet. Cook over low heat until onion is translucent.
  • Do not shake the coconut milk. Take the thick top layer of the coconut milk and add to skillet. Cook for 1-2 minutes. The milk will thicken.
  • Add remainder of the coconut milk (the thin clear liquid), pumpkin, red curry paste, fish sauce, and soy sauce to the skillet. Stir to combine.
  • Add lemongrass curry seasoning and water chestnuts.
  • Add shrimp and spinach. Cook until spinach is wilted. Serve over coconut rice.
  • If making ahead, store in a casserole dish and refrigerate. Bake at 350 degrees for 20 minutes until warm.

Notes

  • Using a pre-measured seasoning mix helps balance the flavors and save time measuring.
  • The pumpkin puree makes the sauce thick and hearty. You can substitute and add additional vegetables.
