When you have a craving for a chocolate chip cookie but none in the house, raid your pantry for cookies that will be ready in 1.5 minutes!
My daughter found a recipe for a giant microwave cookie. We played with the recipe until we think we perfected it. See notes if you want to make one giant cookie. We preferred the smaller cookies. And ready in just 1.5 minutes, it’s the perfect child reward. Given you just use a whisk, you can even let your little make it on their own. You can substitute sprinkles for chocolate chips, too!
Single serve chocolate chip cookies

2 TBS unsalted butter, softened
2 TBS packed light brown sugar
1/2 tsp vanilla
2 TBS egg, beaten (or Egg Beaters)
5 TBS all-purpose flour
1/8 tsp kosher salt
2 TBS semi-sweet chocolate chips
Non-stick cooking spray
Directions
- Whisk butter, light brown sugar, and vanilla in a medium-sized bowl.
- Beat egg with a fork, then add to the butter mixture.
- Mix flour and salt.
- Add 1/2 of the flour at a time and combine into the butter mixture.
- Add chocolate chips.
- Spray a microwave-safe dinner plate with non-stick cooking spray.
- Using a mini-ice cream scoop, scoop out 6 cookies onto the plate keeping them about 1 inch apart.
- Microwave for 1.5 minutes, or until the middle of each cookie springs back when touched.
- Let cool for 2 minutes or so, and then enjoy!
Notes
- We also tried this recipe with sprinkles instead of the chocolate chips, and they came out tasty!
- Some other recipes list over double the amount of sugar and chocolate chips – we tried them – we liked them better with the above ratios.
- Some other recipes use the same cook time, but have you make one giant cookie. It was way too big (but surprisingly, the cook time was right for the giant cookie).
