After an afternoon of peach picking, I needed to come up with healthy ways to enjoy all of our peaches. Salsa is a great treat because it is so versatile. It can be a simple, yet delicious condiment to chips. Or it can transform a grilled chicken breast into a satisfying dinner. The choice is yours.
Peach salsa

1 large peach, diced
1 large tomato, diced
1/2 purple onion, diced
1 jalapeno, seeded and diced
1 lime, juiced and zested
Optional, bell pepper, diced
Salt and pepper
Directions
- Dice the peach. I keep my skins on, but you can peel it if you would like.
- Add peach to a bowl. Zest the lime into the bowl. Juice the lime into the bowl. Toss the peaches with the lime juice.
- Dice tomato, onion, and jalapeno. Add to bowl.
- Season with salt and pepper. Stir to combine.
- Place salsa in refrigerator for half hour for the flavors to meld.
Notes
- If you would like to remove the peach skin, throw the peach into a pot of boiling water for 1 minute. Then immediately place the peach in an ice bath. The skins should then peel easily.
