This dish is a quick and healthy one pot meal. With loads of vegetables, it is a great go to meal.
One Pot Turkey Delight

1 lbs ground turkey or chicken (I use 98% lean meat)
1 bag of shredded cabbage (cole slaw in a bag)
1 onion, finely diced
1 cup of steamed broccoli
1 bag frozen peas (10 oz or less)
1 can (8 oz.) of tomato sauce
1/2 cup of vegetable broth
1 cup of fat-free shredded mozzarella cheese
Salt and pepper
Non-stick cooking spray
Directions
- Dice onion.
- Spray large pot with a lid with non-stick cooking spray. Cook diced onion over low heat until translucent.
- Turn heat to medium and add ground meat. Break up with a wooden spoon. Season with salt and pepper.
- Once meat is nearly done cooking, add the shredded cabbage and stir. At this point, you can put the lid on and turn the heat to low. Allow the cabbage to wilt down.
- Once cabbage is wilted, added the broccoli.
- Add the broth and tomato sauce. Turn the heat back up.
- Cook for another few minutes. Then add the frozen peas.
- After a minute, add the cheese. Serve immediately.
Notes
- Instead of broth, I like to use 1 TBS of Better than Bouillon vegetable base and 1/2 cup of water.
- I used leftover broccoli from the night before, so it was already steamed. You could leave that out of the recipe, or if your brocoli is not already steamed, you could add it with the ground meat so it will be thoroughly cooked.
