Chicken-Zucchini Gumbo

1 lbs chicken breast
5 links of turkey sausage
1 onion
1 bell pepper
3 stalks of celery
1 TBS tomato paste
6 cups of broth
1 can chopped tomatoes (or 5 chopped tomatoes)
1 Bay leaf
1 TBS cajun seasoning
1 tsp chili pepper
1 tsp paprika
Salt and pepper
1 TBS corn starch
2 zucchinis
Nonstick cooking spray
(Optional) 1 lbs raw, cleaned shrimp
Directions
- Cut chicken into bite-sized chunks. Slice turkey sausage into wheels.
- In large pot, spray with nonstick cooking spray, and brown chicken and turkey sausage. Put in a bowl to the side.
- Chop onion, celery, and bell pepper.
- Sweat down for ten minutes adding cooking spray if needed.
- Once softened, add 1 tbs tomato paste, 1 carton of broth (suit your preference), 5 chopped tomatoes (or one can), bay leaf, 1 tbs Cajun seasoning, 1 tsp of chili pepper, 1 tsp Paprika, and salt and pepper. Bring to a boil.
- Add chicken and sausage back into pot.
- Make a slurry of some of the broth and 1 tbs of corn starch. Mix the slurry into the pot. Cook for an hour.
- Chop zucchini into half moon wheels.
- Cook until zucchini is softened.
- (Optional), during last 5 minutes of cooking add raw shrimp.
Notes
- This recipe is made healthier by replacing sausage with chicken or turkey sausage.
- Cut out oil by using nonstick cooking spray.
- You can make this in the instant pot. Brown the meat on the saute mode, then add all of ingredients except the zucchini and shrimp. Cook on high pressure for 8 minutes. Then allow a slow release. Change back to saute mode to add the zucchini and shrimp. Or place in a slow cooker, adding in the shrimp and zucchini half hour before serving.
