Think chicken cordon bleu but with spinach instead of ham and cooked in alfredo sauce. As my one kid said, “Mom, this is how I will eat my veggies – covered in cheese and wrapped in breaded chicken.”
Chicken Florentine Alfredo

6 Chicken breasts butterflied and pounded thin (into cutlets)
2 lbs fresh spinach
1 onion, minced
3 cloves garlic, minced
1 cup ricotta cheese (I used part-skim)
1 cup freshly grated parmesan cheese
1/2 cup fat-free Greek yogurt
3 cup Italian seasoned bread crumbs
1 egg, whisked with 1 tsp water
Salt and Pepper
2 cups Alfredo sauce
Non-stick cooking spray
Directions
- Preheat oven to 400 degrees.
- Mince onion.
- In a large pot, sauté the onion with some non-stick cooking spray until softened.
- Add spinach to pot. Wilt spinach down.
- Mince garlic.
- Add minced garlic to the pot. Cook for 1-2 minutes.
- Turn off heat. With immersion blender, blend the spinach, onion, and garlic.
- Add the ricotta cheese, 3/4 cup of parmesan cheese, and yogurt to the blended spinach mixture.
- Pound the chicken into thin cutlets.
- Add salt and pepper to bread crumbs in a bowl to use for dredging.
- Whisk egg and add 1 tsp of water in bowl to use for dredging.
- Coat each breast in egg then breadcrumbs. Add seasoned chicken to a plate.
- Add a thin layer of alfredo sauce to the bottom of a large baking dish.
- Place a large spoonful of the spinach mixture onto the end of each chicken breast, and roll each breast. Secure with a toothpick.
- Place each breast into the baking dish making sure there is room between each breast.
- Use remaining 1/4 cup of parmesan cheese to sprinkle on the top of each breast.
- Bake for 30 minutes or until internal temperature of thickest part of each breast (not the filling) reaches 165.
- Enjoy with side dish of your choice.
