Farm fresh beets come with the “tops”. These are great greens to saute and enjoy. Don’t throw out those “tops”! Quick, easy, and healthy.
Beet Greens

Beet greens
2 cloves of garlic, minced
1/4 tsp of red pepper flakes
Juice and zest of half a lemon
Nonstick cooking spray
Directions
- Cut beet greens from red stems into bited-sized pieces. See note.
- Mince garlic
- In saute pan on low heat, spray with non-stick cooking spray. Coat garlic. Let cook for 1-2 minutes.
- Then add beet greens and red pepper flakes.
- Cook until wilted on low heat.
- Once cooked, add zest and juice of 1/2 lemon. Serve and enjoy!
Notes
- You can also eat the stems. I find them too bitter, though, so I just use the leaves.
- I like to use non-stick cooking spray to save on calories. There is a non-sticking olive oil phrase that I like to use when sauteing.
