Strawberry Graham Cracker Pie

With no added sugar, this pie is a healthy treat to bring to a Memorial Day BBQ. This “no bake” treat is refreshing on a hot, summer day. If we weren’t in quarantine, I would have made it as a Red, White, and Blue Pie, by simply replacing half of the strawberries with blueberries.

Mediterranean Potatoes

This recipe pairs well with my recipe for Chicken Skewers (also known as souvlaki). My grandmother would make these potatoes in the oven in olive oil. I cut the fat by replacing olive oil with non-stick cooking olive oil spray.
