Bananas Foster

I love this New Orleans treat, but I decided to try to make it a little healthier. The dessert was so quick to pull together. It was super tasty with my simple replacements. While I made the sauce healthier, I served it over vanilla ice cream.

Memorial Day Pulled Pork, Cole Slaw, and Potato Salad

Today we honored our heroes who lost their lives defending our liberties. I took our all-American recipes and made them a bit healthier by cutting out extra fats like mayonnaise. This is an all-weekend recipe as the pulled pork needs to slow cook overnight. Usually, my husband smokes the pork shoulder overnight. This year, due […]

Strawberry Graham Cracker Pie

With no added sugar, this pie is a healthy treat to bring to a Memorial Day BBQ. This “no bake” treat is refreshing on a hot, summer day. If we weren’t in quarantine, I would have made it as a Red, White, and Blue Pie, by simply replacing half of the strawberries with blueberries.

Mediterranean Potatoes

This recipe pairs well with my recipe for Chicken Skewers (also known as souvlaki). My grandmother would make these potatoes in the oven in olive oil. I cut the fat by replacing olive oil with non-stick cooking olive oil spray.

Chicken Skewers

My daughter asked for “chicken on a stick” for dinner. A great start to the Memorial Day weekend. These easy chicken skewers marinate in just twenty minutes and bake just as quickly – or you can grill them. Since it was raining out, I baked them.

Eggplant Pizza

This is my daughter’s favorite vegetable dish. The first time I made it, I convinced her it was a pizza so she would try it. Now she loves it! During the summer, we have replaced the tomato sauce with a slice of fresh tomatoes and a sprig of fresh basil per pizza stack. We make […]

Apple-Broccoli Slaw Salad

This tasty salad is easy to prepare. Apples are the secret star to this dish. Whip up your own vinaigrette to cut out some of the extra calories from oil. Using prepared broccoli slaw saves time. This salad can be prepared as a quick side dish or main course after work.
