Strawberry Graham Cracker Pie

With no added sugar, this pie is a healthy treat to bring to a Memorial Day BBQ. This “no bake” treat is refreshing on a hot, summer day. If we weren’t in quarantine, I would have made it as a Red, White, and Blue Pie, by simply replacing half of the strawberries with blueberries.

Mediterranean Potatoes

This recipe pairs well with my recipe for Chicken Skewers (also known as souvlaki). My grandmother would make these potatoes in the oven in olive oil. I cut the fat by replacing olive oil with non-stick cooking olive oil spray.

Chicken Skewers

My daughter asked for “chicken on a stick” for dinner. A great start to the Memorial Day weekend. These easy chicken skewers marinate in just twenty minutes and bake just as quickly – or you can grill them. Since it was raining out, I baked them.

Eggplant Pizza

This is my daughter’s favorite vegetable dish. The first time I made it, I convinced her it was a pizza so she would try it. Now she loves it! During the summer, we have replaced the tomato sauce with a slice of fresh tomatoes and a sprig of fresh basil per pizza stack. We make […]

Healthier Bread Pudding

My first “guest” recipe as this was made by my husband for me on Mother’s Day. This recipe makes bread pudding healthier by using Schmidt 6-4-7 bread, and replacing the eggs with Egg beaters. We also did not use any heavy cream. It still tastes delicious. This is a great recipe when you have an […]

Disney’s Dole Whip

Disney World has a delicious treat called Dole Whip, made from Dole Pineapples. At the beginning of Quarantine, Disney posted its recipe used in Walt Disney World. Since we have come to terms with no longer taking our once planned Disney World vacation, I decided to give it a try as a Mother’s Day treat. […]

Pineapple Upside Down Cupcakes

These cupcakes are made healthier by replacing the oil with unsweetened applesauce and the eggs with non-fat Greek yogurt. You’ll never miss those ingredients. Instead of icing, the sweetness of pineapple provides a healthier alternative to icing. These cupcakes became the “cake” for my Toilet Paper Cake. https://cookingupjustice.com/toilet-paper-cake/

Toilet Paper Cake

In these times of toilet paper hoarding, what better way to celebrate a birthday in quarantine than with a little TP cake! [Note: No actual toilet paper was sacrificed in the making of this cake.] This post is limited to assembling the cake. The recipe for the cake that I used is available at http://www.cookingupjustice.com/pineapple-upside-down-cupcakes. […]

Cinco de Mayo / Taco Tuesday – In Quarantine

Figures the year that Cinco de Mayo falls on a Taco Tuesday, we are in quarantine. Luckily, I was able to get supplies delivered to enjoy delicious pork carnitas served with a Mexican slaw and guacamole. I maximized my cooking time by using my Instant Pot to make the carnitas. Make the slaw up to […]
