Southern-Style Collard Greens and Kale

In this week’s produce coop delivery, we received collard greens and kale, so I decided to make them Southern style, slow cooked with pork bones. While I did not have a ham hock for a truly authentic dish, I had bones from on the bone pork chops that I had cut off the bone for […]

Mojito

If you have a garden overflowing with fresh mint, you need to try this delicious cocktail. It perfectly combines lime juice and mint into a relaxing adult beverage. I traveled to Cuba on an education license in law school to learn about the Cuban legal system. The experience was eye-opening. My colleagues and I became […]

The roasted beets combine well with the balsamic vinegar and sweet strawberries. It is truly a red salad as the […]

Strawberry Graham Cracker Pie

With no added sugar, this pie is a healthy treat to bring to a Memorial Day BBQ. This “no bake” treat is refreshing on a hot, summer day. If we weren’t in quarantine, I would have made it as a Red, White, and Blue Pie, by simply replacing half of the strawberries with blueberries.
