Nana Fran loves rum cake, so for her birthday, I turned ordinary yellow cup cakes into extraordinary mini rum cakes! I also made them oil-free by substituting the oil for a combination of Greek yogurt and applesauce, which do not change the flavor while keeping the muffin moist and fluffy.
